I love cake, and I like when the dough is light and airy! When you can eat a few of them without needing to sleep after. :))
The dough I use is the sponge dough:
for each egg we add:
- 20 grams flour
- 20 grams sugar
- 1 tablespoon oil
extra we add:
- vanilla sugar
- cooking powder
How to make it:
Separate the yolks from the whites. Place the whites into a bowl and mix until becomes a hard foam. If you turn the bowl upside down, the foam won’t move. Add the sugar and vanilla sugar. Mix until the sugar is melted. Add the yolks and mix, add the flavours and mix, add the oil and mix. Until now you can use the high speed from the mixer. Add the flour mixed together with the baking powder, and mix with the slow speed from the mixer.
Tips: if you want to add cinnamon or cocoa powder you can. Is better to add them before the flour.
Grease the tray with butter or margarine and coat it with flour. You can add baking paper to make sure it doesn’t stick.
Place the tray in the preheated oven at 175 degree for 20 minutes. Test it with a tooth pick. If the tooth pick is clean is ready, if not let it a little more.
Let it cool. Cut it at the hight you want.
Place the button layer, add the cream you like and place fruits. Push them a little into the cream and add a little more cream to cover them. Add one more layer of dough, cream and fruits.
You make it with what filling, fruits and dough ( simple, with cinnamon or cocoa powder) you want and like! ❤ It is home made and is exactly what you wish! Also the size depends on your wishes! And appetite! ❤
Ps: One time I didn’t use the baking paper and I let the dough very long time into the tray…and ups…surprise! got stick to the tray. I couldn’t use it for a cake, so I make a syrup from water, sugar and rum flavour. Put it on top. Cut it into slices and place chocolate topping on. Let it sit over night into the fridge to get juicy and cold. And that is how the ” No name” cake appeared. Sometimes when things go wrong …something good comes out! ❤
